A rockin' fall harvest!


 


This year, Hans built me three brand new garden boxes...
with all new soil... 
you wouldn't think it would have made that big of a difference...
but look at this baby...


 That is a Celebrity, and yes it was my favorite for taste, texture and amount of seeds.
Isn't she a beauty?!
So for the last 6 years or so, every Saturday of October General Conference, I harvest my tomatoes and make marinara sauce that I freeze to use in coming months.  I made so much this year, I will have enough for a year.
 
 This was the box from my garden.  Not thinking that I had very many, I bought 2 additional boxes from Cook's greenhouse. Man I had my work cut out for me.

Blanch the tomatoes for easy peeling.
Cut onions...
 

Usually I don't mind cutting onions, but these were stingers....the goggles were amazing, not one tear.  (I am fully aware that I am a huge nerd, that is why Truman took this picture...)
Cut carrots.
Cut celery.
Peel tomatoes after they cool a bit.
Cook everything for an hour.
Blend.
Put in containers.
 I'm not sure why, but when I blend it, the sauce turns orange.  I know there are carrots in it, but not that many.... I think it is because I use the Vitamix and it blends it so well, it is almost whipped.  Deliciously smooth and creamy.... but now my kids lovingly call spaghetti, "orange noodles."
 Josie spent the whole day walking around the house with her zucchini babies. This is what happens when you don't check your garden for a week. She was darling and was having so much fun.  
It was a very good day!

The goggles are awesome! I've tried the candle burning close by, but this never crossed my mind! Did you have crazy eye circles when you were done?
